Just having made this, I would say no to buttermilk. As far as reduced anything, buttermilk in my market is always made with 2% milk…you’ve got a reduction right there. And seriously, 2 tbs of regular sour cream is not a killer. Consistency of buttermilk not the same as sour cream…I think you’d have very wet mashed cauliflower. This is a great recipe…really enjoyed it with my turkey meatloaf.I couldn’t resist dressing it up a bit…toasted some fine bread crumbs, threw in paparika and a bit of cayenne pepper and sprinkled over the top. For good measure tossed on a bit of Mexican four cheese shreds and ran it under the broiler to melt. Wish I could post a picture. Looks good enough to eat!

  • 1 medium head cauliflower
  • 1/3 cup warmed chicken broth
  • 2 tablespoons reduced fat sour cream
  • salt
  • pepper
  • thinly sliced, for garnish fresh chives


Place the cauliflower florets in a microwave-safe bowl with 1/4 cup water, cover with plastic wrap and microwave for 3 to 5 minutes, or until completely tender.

Place the cooked cauliflower in a food processor. Add chicken broth, sour cream, salt and pepper; puree until smooth. Serve garnished with sliced chives.
